It was a fun week visiting family in Colorado. Among the highlights was celebrating our daughter’s Golden Birthday! We all pitched in to gift her an instant pot (replica brand). We were not experiencing the ridiculous temps that Iowa was having, but it was still cold enough to enjoy beef stew created in her present. Note: we had to exchange her original gift because it malfunctioned presenting us with what we called “smoker eggs.” We wish we had taken a picture, but you can imagine what happens when all the steam escapes from the lid and there is no water left for your hard-boiled eggs.
Back to the stew. It was delicious and everyone raved about the tender meat! It reminded me how God will bring things into our lives to “tenderize” us. Sometimes the process is sped up through a particular difficult time or trial. James put it this way:
Count it all joy, my brothers, when you meet trials of various kinds, for you know that the testing of your faith produces steadfastness. (James 1:2-3 ESV)
We are so glad we caught the faulty cooker otherwise our stew would have been ruined and the meat tough. In the same fashion our hearts can be faulty allowing the pressures of life to harden us rather than develop patience. I have reproduced the recipe below (I did not use the Worcestershire Sauce) – credit to the saltymarshmallow –
